Italian Peasant Soup


Two recipes in one day! What a treat! :) 

This is one of our family favorites, loaded with lots of good stuff, and delightfully yummy. 

Italian Peasant Soup

1 # Italian sausage links, casings removed & cut into 1" slices
2 medium onions, chopped
6 garlic cloves, chopped
1 # boneless skinless chicken breast cut into 1" cubes
2 cans (15 ouncers) white beans, rinsed and drained
2 cans (14.5 ouncers) chicken broth
2 cans (14.5 ouncers) diced tomatoes
1 teaspoon dried basil
1 teaspoon dried oregano
6 cups fresh spinach leaves
Shredded parmesan cheese for topping (optional)

In a dutch oven or soup kettle, cook sausage over medium heat until no longer pink; drain. Add onions and garlic; saute until tender. Add chicken; cook and stir until no longer pink.
Stir in the beans, broth, tomatoes, basil and oregano. Cook, uncovered, for 10 minutes. Add the spinach and heat just until wilted. Serve with cheese if desired. 
NOTE: Wait to add the spinach until just a few minutes before serving so it doesn't turn to a mushy mess! :)
