Pea Salad... My Summer Favorite

As soon as spring hits my mom and I go crazy making this pea salad every chance we get. I had it for lunch, and here I sit, drooling over it! It's SO good.

(I am guessing on the measurements as I always just do it to taste.)

1 pkg. frozen peas
2 or 3 heaping tablespoons mayonnaise
1/8-1/4 cup white vinegar (my mom likes less, I like more)
1/2 - 1 T. sugar
Shredded or cubed Cheddar
Cashews
(My mom likes to add freshly chopped white onion, but since I'm anti-onion, you won't see that on my blog.)

Place the peas in a colander and rinse with water until they are no longer frozen. Set aside.
Mix the mayo, vinegar and sugar in a bowl, and then toss all ingredients together.

I think I'm going to go make myself a bowl now. Mmm.
