A Quick & Easy Meal: Cheddar & Broccoli Home Baked Fries

Sometimes you just need one of those quick and easy meals. Tonight was one of those nights. My husband is sick, so it's just the boys and I. And I really didn't want to make some big dinner that I would just have to get them to eat. But I still wanted them to get their veggies in.

Broccoli Cheddar Baked Fries
(Serves 2-3)

4-5 Whole russet potatoes
Garlic infused olive oil*
S & P
1 - 2 cups Frozen Broccoli, chopped
Cheddar Cheese

Slice Potatoes into fries and put them in a single layer on a baking sheet. Drizzle in garlic olive oil, and stir to combine. Sprinkle with salt and freshly cracked pepper. Bake at 400 degrees for about 10 minutes. Remove from oven, turn with a spatula, and scatter broccoli over potatoes. Return to the oven and bake for 20 minutes or until the potatoes are tender and starting to brown. Cover with shredded cheddar, and continue to bake a few more minutes until the cheese is melted.

*I had a recipe for Cheddar Beer soup that called for garlic infused olive oil. I figured I would see if it was on sale, since I had to go to the store anyway. Well, it was. And it is now one of my favorites. You can use it in almost any savory dish: drizzle over pizza crust, saute onions for soup... pretty much any recipe that calls for olive oil. I use it ALL the time. And it adds such a wonderful garlic flavor without having to add garlic to your dish.
