{Half Healthy} Buttermilk Waffles

What do you know! I'm alive!! Although, most of you know that anyway, but it sure has been a long time since I've posted.

So this morning began early, after ending late, I was up with the baby and decided to make some waffles for the hubs before he went to work. I pulled out my regular waffle recipe and decided to throw in some whole wheat flour to feel a bit healthier. Well, I got to the last ingredient. The fat. 1/2 cup oil or melted butter. I cringed. I just couldn't do it. I thought about substituting 1/2 of that with applesauce until it occurred to me something I had read on Pinterest. Pureed avocado. Really? Yep. I did it. And they were so good. Great texture. Great flavor (no avocado taste in there). They tasted just like yummy, crispy waffles. Except for the occasional green speck, you would never know.




Half- Healthy Buttermilk Waffles

1 cup all purpose flour
3/4 cup whole wheat flour
2 T. cane sugar
1 t. baking powder
1/4 t. salt
1/4 t. baking soda
2 cups buttermilk
2 eggs
1/4 cup melted butter or oil
1/4 cup pureed avocado
1 t. vanilla

Mix dry ingredients in a large bowl. Make a well and pour in rest of ingredients. (You can whip these up in a seperate bowl, and then combine, but this mommy likes shortcuts if it won't harm the overall taste.) :) Mix just until combined.
Pour into preheated waffle iron and cook according to manufacturer's directions.
